How to Honey Chilli Potatoes

Crispy potato fingers glazed with a honey chilli sauce.
Preparation Time : 20-25 minutes
Cooking Time : 20-25 minutes
Servings : 4

INGREDIENTS
Potatoes, cut into fingers , soaked in water 5-6 medium
Garlic paste 1 teaspoon
Red chilli paste 2 teaspoons
Red chilli sauce 2 teaspoons
Cornflour/ corn starch 5 tablespoons
Salt to taste
Oil
1 tablespoon + to deep fry
Garlic, chopped 5-6 cloves
Red chilli flakes 1 tablespoon
Vinegar 2 teaspoons
Honey 2 tablespoons
Sugar 1/2 teaspoon
Fresh coriander leaves, chopped 1 tablespoon
Spring onion greens, chopped 2 stalks

METHOD
Drain potato fingers and transfer into a large bowl.
Add garlic paste, red chilli paste, half of red chilli sauce, cornflour and salt with mix with a light hand. Heat sufficient oil in a wok.
Deep fry potato fingers till crisp and golden brown.
Drain and place on an absorbent paper. Set aside.

To make sauce, heat one tablespoon oil in a wok and add garlic.
Sauté for a minute. Add red chilli flakes, remaining red chilli sauce and vinegar.
Stir. Add honey, sugar and salt. Stir and cook till well blended.
Toss in fried potato fingers and mix well.
Transfer into a serving dish and serve hot garnished with coriander leaves and spring onion greens.
