Spanakopita - Spinach and cheese dumpling
Ingredients
Spinach blanched : 1kg
Onions - finely blanched : 50gms
Olive Oil : 25ml
Spring onion - finely chopped :25gms
Parsley - finely chopped : 25gms
Nutmeg - grated : 5gms
Cottage cheese : 50gms
Feta cheese : 100gms
Parmesan cheese - grated :20 gms
Eggs - lightly beaten : 4
Black pepper : 5gms
Filo Pastry : 10 sheets
Butter -melted : 25gms
Method
Gentry fry onion in oil for 10mins
Mix drained spinach with onion - oil mixture in a large bowl
Add herbs , nutmeg , cheeses and eggs and stir to combine
Check saltiness of mixture and then add salt to taste
Brush baking dish with butter and line with a sheet of Filo pastry
Spread filling in a pastry lined dish and top with remaining filo
Trim edges if necessary
Brush top lightly with butter and score top layer of pastry lightly into squares using a sharp knife or razor blade
Sprinkle a little cold water to prevent the pastry curling up
Bake in oven for 45mins
Tips
Garnish with some crumbled fita
Filo pastry is available in any supermarket in frozen section
